Jason's Deli in Murray across the street from Fashion Place Mall on 6400 S is excellent - they offer delicious sandwiches and an awesome full salad bar as well as lunch specials. Also I love The Bakery on 300 E between 200 S and 300 S; excellent soup & sandwich combos, delicious desserts (can be pricey, but it's handmade in French style) Soup & salad, sandwich & salad, or you can choose from a variety of daily pastas and quiche specials. Shanghai cafe is a great place for groups; diner-style chinese/vietnamese fair - anything they make can be made with meat substitute, so it's all vegan/vegetarian friendly. Also at this place the portions are huge so get several plates with your friends and share - comes out to about $6-8 per person.

For price + quality Cher's Deli in Downtown Salt Lake City can't be beat. $5 a person for amazing sandwiches. Though the hours are limited (they are open just for lunch - closing at 4p), it is worth it to catch it.
