Hoagie Haven. Or Panera if you want to get a little fancier.

This tip has the address "242 Nassau St., Princeton, NJ 08542"

There's also a Subway and a Wawa if you're thinking generic. On Nassau Street, Iano's Pizzaria, Massimo's, and Old World Pizza are decent and within walking distance of campus (and the NJ transit stop).

Tico's makes inexpensive but delicious panini's daily. Wash your sandwich down with one of the freshly squeeze fruit smoothies. Located near the corner of Spring St. and Witherspoon St.
