Well, if you are stuck here, if you have kids the Wildlife Experience is a great option. There is a new skate park near the cineplex, as well. There are festivals throughout the year (check a Parker community web site for dates). Just a few minutes away from Parker are several malls (the outlets in Castle Rock, Southlands in Aurora, and Park Meadows in Lone Tree).
The best bet is to travel into the mountains (Vail, Aspen, Breckenridge) or head up to downtown Denver or Boulder to find good food and entertainment.
