There are a couple of pancake houses on the main square: Oudt Leyden is nice (if you like the dutch style of giant savory pancakes); Buddhas Thai is good: http://www.buddhas.nl/. There's not much available after 9pm - though some of the steak houses open a bit later, and you can always get a kebab.
