Samcheong-dong
As a native of Seoul, I recommend you guys Samcheong-dong. ("dong"means "~town")
It has some fancy restaurants, galleries, and cafes.
Traditional atmosphere + Modern restaurants....
Though you gotta walk a while from the nearest subway station, it isn't a big deal.
Evening time is the best, in my opinion.

A really nice quaint french/italian restaurant. They have an awesome terrace with nice wooden tables and space heaters.

The bus service is the most economical. Takes you to most major hotels in Seoul city, as well as to the greater Seoul area including Songdo and Incheon cities. The KAL Limousine bus costs more than the standard buses, but is generally a bit more comfortable.
Bus ticket offices located in the Arrivals hall. On some buses you can pay the driver direct (in local currency).
Ritz-Calrton Gangnam District
If you're looking for something classy and relaxing, stay at The Ritz-Carlton in Seoul. We paid only $150 a night and that was split among 2 of us. The concierge was fantastic and all employees spoke English. Some even spoke Japanese!
Insadong 4 Gil
Here's a vegetarian restaurant which appeals to both vegetarians and meat eaters :)
Oh Se Gae Hyang is located in Insadong 4 Gil. The setting of the restaurant is Korean where you will have to take off your shoes and sit on heated floor. So please no stinky feet ;) It's very cheap and the food is excellent with choices of both traditional Korean and western.

If you want to relax after a long day of shopping in the city, check out tea houses in Insadong. Take subway Line 3 to Anguk, Exit 6.
My favourite one is called the 'Beautiful Tea Museum'. Besides serving tea in a meticulous manner, the place exhibits porcelain artwork by young artists.

If you happend to visit the Yongsan Electronics Market you will probably arrive at the train station. It is also shopping center (I-Park). Take a look but don't let them get you to buy anything. The real market is across the rails at the backside of the station. Still, do not stop at the little center you will arrive at after you crossed the walk. Go into the ground floor and leav that building again and go straight over the parking lot to where you see building that look more like warehouses. After you crossed the parking lot or the overwalk there are several passages in the building you arrive at. One passage goes down a few stairs to the gamers heaven. If you cross the street to your right you will find on weekends a little fleamarket with all kinds of PC hardware. Enter the buildings and try not to get lost. Lots of little shops selling everything you need.
In any case, never take the first price. Yongsan is not the cheapest place to buy anyway.
If you are looking for service centers there is a silver building called ETLAND. In its basement are most of the well known brands service centers.

Various options available in the Arrivals hall. I normally use Skype Roaming www.skyperoaming.com who are located between Gates 6 and 7, and 10 and 11.
After the first use, you get a discount card as well for subsequent uses. Typical phone they give is a 3G Samsung Anycall. Call and rental charges are both reasonable, and you get free SMS within Korea and free incoming.
