For the low end, I can thoroughly recommend the Budget Backpackers on Cowgate, but make sure you take earplugs because Cowgate is a noisy hive of partying Scots most nights of the week. Budget Backpackers is well-run, clean and friendly - everything a backpackers should be. Also don't miss their free daily walking tour of Edinburgh for a quick orientation.

For a bit more luxury and comfort (well, all right: a lot more luxury and comfort :-) I rent an apartment. The two that I have rented in Edinburgh are from "Self Catering Edinburgh" at St Leonards, and later at Grassmarket No. 1. Both were excellent.
